Raw Corn Salad
Serves: 6
Serving size: 1 cup
Ingredients
- 4 ears corn
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 1/2 red onion, chopped
- 2 tablespoons vegetable oil
- 1/4 cup vinegar
- 1 cup fresh basil, chopped
- Salt and pepper, to taste
Preparation

Remove husks from corn and cut kernels off the cob.
- Combine corn, tomatoes, cucumber, and onion in a large bowl.
- In a small bowl, combine oil, vinegar, basil, salt and pepper. Mix well.

Pour dressing on the salad and toss. Serve and enjoy!
- Refrigerate leftovers.
