Roasted Almond Sweet Potatoes

Ingredients

  • 4 peeled, cubed sweet potatoes
  • 3 tablespoons olive oil
  • 4 cloves minced garlic
  • 1/2 cup slivered almonds
  • 1/2 teaspoon sea salt (optional)
  • 1/3 cup fresh thyme leaves

Preparation

  1. Preheat oven to 450 degrees F.
  2. In a large bowl, combine sweet potatoes, oil, garlic, and thyme.
  3. Toss to coat.
  4. Place mixture into a single layer on a baking sheet.
  5. Place on top rack of oven.
  6. Roast 4 minutes or until tender.
  7. On another baking sheet, spread out slivered almonds.
  8. Place in oven until slightly browned, about 8 minutes.
  9. Mix sweet potatoes and almonds together.
  10. Salt if desired, serve warm.
