Mushroom Broccoli Pasta Salad

Serves: Makes 4 servings  |  Prep Time: 10 minutes  |  Cook Time: 20 minutes

Ingredients

  • 1 16 ounce box spiral pasta
  • 1 cup diced fresh mushrooms
  • 1/2 cup chopped red bell pepper
  • 1 cup chopped broccoli
  • 1/2 cup chopped tomatoes
  • 1 cup shredded or cubed mozzarella cheese
  • 1/4 cup fat free or low fat Greek or Italian salad dressing

Preparation

  1. Cook pasta according to directions on box.
  2. Strain and set aside to cool for 10 minutes.
  3. In a large bowl, toss together mushrooms, red bell pepper, broccoli, tomatoes, and mozzarella.
  4. Add salad dressing and stir.
  5. Serve immediately or refrigerate.
