Three Bean Vegetable Chili

Serves: Serves 6  |  Prep Time: 5 minutes  |  Cook Time: 15 minutes

Ingredients

  • 2 15 ounce cans diced or chopped tomatoes
  • 1 medium chopped onion
  • 1 medium chopped green pepper
  • 1 15 ounce can drained kidney beans
  • 1 15 ounce can drained great northern beans
  • 1 15 ounce can drained black beans
  • 1 15 ounce can drained corn
  • 1 tablespoon vegetable oil
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder

Preparation

  1. Heat oil in pan over medium heat.
  2. Add onion and green pepper.
  3. Sauté for 5 minutes or until onions turn soft and clear.
  4. Add beans, corn, and tomatoes.
  5. Stir well.
  6. Add cumin and chili powder.
  7. Heat for 10-15 minutes or until simmering.
  8. Serve sprinkled with cheddar cheese and whole wheat bread.
